Do the Rephaim ever possess or animate animals like Zombie Dogs or Lions or some such? If not is there a particular reason why they do not?

No reason they wouldn't. A zombie guard dog is still a guard dog. They may even have "improved" animals through their experiments -- a literal gun dog (with arms holding pistols) would be suitably sick.

Check out the Hellhounds on page 161 of the 2350 book for a good template.

I'm taking a look at sizing up some bizarre Raphaim animals for random encounters. I'm taking a look at possible beasts and applying the zombification template on them just to see what would happen. I'm imagining a fuzzy-wee-little bunny with sharp-pointy-teeth!

I have been using the stats from the Savage Worlds Fantasy Companion: Explorer Edition for Raphaim animals and changing the flavor text. So far it's been invaluable. I'm looking forward to getting the horror companion when it comes out to see what modifications can be further made.
