Question: What do you replace a dead senior knight character with when the player wants to be regular infantry?

There's a good change the player who is playing the Senior Knight may be dieing in the near future (bets have already been placed.) I'm not worried about the death but what happens to the lance after that?

Is it better to have an NPC senior knight, have another player draw up a secondary character or get daring and bring in a new player (not sure my place can fit one more.)

Promote a character to Senior Knight. Necropolis 2350, page 47 covers that. If no one wants to become a Senior Knight, stick in an Extra.

Do they have to meet the requirements for Senior Knight @ that point?

Yep. Odds are they are missing Knowledge (Battle) d6 and Command. You could give them the benefits now and settle the XP bill later by simply not giving them XPs until the costs are met (3 advancements if no Battle skill). Or bend the rules. Drop the Battle requirement and give them Command either for free or at the cost of their next advancement.
